For this 2015 edition, Christophe Roussel has decided to unveil galettes des rois with crunchy ideas and top-of-the-range ingredients!
Fresh almonds, 80% cocoa chocolate, Sicilian pistachios, Tulameen raspberries... Christophe Roussel, the famous pastry chef and chocolatier from La Baule, also based in Paris, unveils his two original Galettes des Rois :
GALETTE DES ROIS "LA CHOC A POIS"
This ultra-thin galette succumbs greedily to the " polka dot print on gold dress " trend. The chocolate crumble rounds offer a lovely new "3 crocs" texture of increasing intensity... one for the puff pastry underneath, another for the puff pastry on top, and a 3rd totally crunchy crunch with the chocolate crumble dots. The inside is topped with a "grand cru" 80% cocoa chocolate frangipane.

GALETTE DES ROIS "FRAMBOISE ROYALE"
In the tradition of square galettes, Christophe Roussel creates a fresh, fruity version with frangipane. A low-sugar raspberry compote adds lightness to an upscale frangipane with whole almonds and Sicilian pistachio.
