A classic, to be sure, but here, simplicity becomes an art, thanks to unparalleled expertise and details that make all the difference!

Manufactures Alain Ducasse's Galette des Rois 2025 sublimates exceptional ingredients. It begins with an inverted puff pastry, made with flour from the mills of Versailles and golden brown to perfection. Its creamy center contains a frangipane, a blend of almond cream and custard, enhanced by freshly shelled and roasted Sicilian almonds with their skins. Instead of traditional almond powder, the almonds are ground to a generous granulometry, adding depth of flavor and a slightly crunchy texture. A unique process that gives this creation all its character.

A nod to the big sister of all Manufactures, that of chocolate, the bean takes the shape of a cocoa pod. And for the lucky ones, ten galettes contain an exclusive red bean, offering a 1h30 VIP workshop with the Chef. Royal, isn't it?

Flora Davies, who worked in the kitchens of Maison Ducasse from Paris to London before taking over the reins at Manufacture de Biscuits, has created a classic Galette des Rois, but one that is perfectly mastered, enriched with subtleties that make it irresistible and ultra-gourmet.
