A new address to add to your list of restaurants to try out. We're talking about Ensuite, the new kid on the block in the rue des petits-champs. This restaurant offers healthy, gourmet cuisine throughout the week, as well as a hearty brunch on Saturdays. With exemplary rigor, each dish here is subjected to the validation of a naturopath, Anne-Flore Martinez, to guarantee a nutritionally balanced meal rich in taste.
This restaurant is the story of Jonathan, Boris and Alexandre, three friends from business school who went their separate ways to find each other. One went to Los Angeles, the other to New York, and the last to Australia. Each has immersed himself in the city and country where he cut his teeth. It was in Dubai that they came together, at the Burj Al Arab Jumeirah, the world's only seven-star hotel, before returning to France to set up their own concept, Ensuite, in Paris.
Drawing on their experiences abroad, they have imagined a convivial place that offers both healthy and gourmet dining. Here, as a token of trust, the dishes are prepared, or rather assembled, before your very eyes. The restaurant also has the merit of adapting to the different requirements of its clientele. So, if you're vegan, gluten-free or simply don't like one of the elements in a dish, we'll replace the food that doesn't suit you with another that will please you more. In short, you can personalize your menu as you wish.
The other great feature of this restaurant is its juices. There's no centrifuge here, just ajuice extractor. Why is that? Because this way, your juice is cold-pressed, preserving the vitamins of the fruit and vegetables used. The result is a richly flavored drink, with no need to add sugar, and that's just fine. The virtues of each juice are specified on the menu, so if you're looking to boost your immune system, you might choose the Pick-Up (red apple, pear, white grape and vanilla); if you're looking for a detox drink, we strongly recommend the Rehab (kale, broccoli, granny apple, cucumber, lime); and finally, you can recharge your batteries with the energizing juices.
Here, we don't skimp on quality, or even quantity. If you venture to Ensuite on a Saturday, you'll enjoy a hearty, healthy brunch that's sure to tantalize the taste buds. Two menus are on offer: the bird menu, at €19.90, includes juice, fruit salad, a main course with scrambled or poached eggs, plus pastries, bread, jam, honey and unlimited tea or coffee. The second menu, the Eagle at €24.90, offers the same thing with an added dessert.
You can choose between a hot dish of steamed grilled potatoes, chicken with Provence herbs, red peppers, mushrooms with parsley and shallots, parsley and coriander, and two cold dishes, the first of which is a duo of quinoa with herbs, half-cooked salmon marinated in lemon, accompanied by a mesclun of young shoots, a mix of radishes, green apples and red onions. The second, certified vegan, also offers a duo of quinoa with herbs, accompanied this time by kale and kiwi, mushrooms with parsley and shallots, avocado, pumpkin seeds and pomegranate.
Those who have fallen for the Eagle menu can choose between different energy bowls or pancakes designed from a coconut milk recipe to suit everyone. Among the former, there's a must-try, the acai bowl which features acai pulp and banana mix, with kiwi, homemade granola, pecans, honey & cranberries. A note of sweetness to end your brunch on a high note.
