Since early 2019, Christophe Michalak took it into his head to revisit the greatest classics of the French pastry (for our greatest happiness!) with a novelty every two months, for the Tradition collection.
This time, the pastry chef chose to unveil foodies his version of the Tarte Tropézienne. By the way, do you know the story behind the Tarte Tropézienne?
We owe it to Alexandre Micka, a Polish pâtissier who imagined in 1952 in Saint-Tropez a brioche recipe and a mixture of two creams inspired by one of his grandmother’s recipes.
We owe the name to Brigitte Bardot who discovers it on the set of “And God Created Woman” who decides to name it Tarte de Saint-Tropez, shorten into Tarte Tropézienne afterwards!
Christophe Michalak’s Tarte Tropézienne is made of a brioche soaked with orange blossom syrup, light butter cream and crème pâtissière, the whole sprinkled with sugar grains.
It can be enjoyed on July, August and September 2019 in Christophe Michalak stores, by the slice (€5) or whole (€26) served in a lovely metal box.
A very light dessert!
