When haute pâtisserie meetscontemporary art, the result is an ultra-chic collaboration that's truly mouth-watering. On one side, pastry chef François Daubinet, on the other, visual artist Hopare. Together, the two have imagined an original collaboration, to be discovered from November 5 to 8.
An admirer of Hopare's work, the pastry chef met him at one of his exhibitions, and their shared desire to break codes and transcend boundaries was an obvious choice. François Daubinet and Hopare then joined forces to create an unusual work combining their two worlds, food and design .
Together, they created Fragment, a limited-edition entremets, the result of a performance that blends gastronomy and artwork. Like a fragment of one of Hopare's urban works, this entremets is conceived as a sculpture: an impression of raw material, a fragment of rock, shaped and carved from chocolate to create an exceptional piece.
The base of the entremets consists of a peanut praline crunch and a soft roasted peanut cookie. The heart reveals a creamy caramel, housed in a vanilla and tonka bean crème brûlée. A creamy 65% chocolate mousse wraps up the composition.
And so that the object stays with you after tasting, you are of course invited to keep the case in which the entremets are housed, numbered and printed with an original work by artist Hopare.
This Fragment entremets signed François Daubinet x Hopare can be found in a pop-up store at 98, rue de Turenne in the 3rd arrondissement from November 5 to 8, 2020. The entremets cost €125 for 6 gourmets.
