But now it's back, stronger than ever, and François Blanc didn't wait for this new trend to fall in love with this culinary French pastry. During his wanderings through the streets of the capital, this culinary journalist made it his mission to find the best flan in Paris.
And it's not one, but 51 flans that François Blanc unveils in his new cookbook, soberly named FLAN, published last autumn by Ducasse Edition.
From palace flans to neighborhood pastry shops, from the capital to regional favorites, from traditional flans to the craziest recipes, from classic creations to original variations, FLAN reveals the richness and astonishing diversity of the flan world .
Among the recipes from the chefs featured in the book are Maxime Frédéric 's vanilla and milk jam flan(Cheval Blanc Paris), Erwan Blanche & Sébastien Bruno's coconut flan (Utopie) and Verot' s flan en croûte, as well as regional specialties such asArnaud Larher 's Breton far or Cathy Paraschiv's Romanian alivenci(Ibrik).
Quentin Lechat, pastry chef at the Royal Monceau, has even devised 10 crazy transgressions for the book, from flan croquettes to flan pizza (yes, yes!). In short, the bible for flan lovers to slip under the Christmas tree!
