“The Burger from Tokyo”, this is how Motto Burger sets it all. This new fast-food in Paris 8th arrondissement, nestled in rue de Ponthieu, offers a new version of the gourmet burger that already stole the heart of many Parisians. Chef Yasuo Nanaumi, who soon will celebrate a half-century long career behind the stove, after working for great houses including Moulin de Mougins or at Lucas Carton, faces a hard challenge: revisiting burgers with a Japanese twist. The outcome: 6 burgers, each named after a neighborhood in Tokyo and the promise of an enlightening culinary experience.
Burgers are cooked so that you can eat them really easily. Homemade buns are incredibly moist. Rectangular and quite flat, they are easier to bite into. Good riddance to toppings getting out of dodge!
By the way, we imagine the intense research work carried out by Yasuo Nanaumi to adapt Japanese flavors to these sandwiches. Dressings, for example, which are ordinarily too running for this kind of use, have been reworked until the chef managed to get a texture and a taste as high as his expectations. Also, Yasuo Nanaumi pays a particular attention to the ingredients he uses. That way, all meats come from France.
Each burger is a unique experience. The best-seller is the Shibuya. Beef cooked in miso sauce and served with bacon and marinated ginger. To this, is added cheddar – to bring a cheesy touch without altering the other flavors as well as perilla that brings a nice fresh touch.
Fish lovers will surely go for the Tsukji. Here, grilled salmon with miso goes well with a yuzu vinaigrette to create an explosion of flavors in the mouth. The Asakusa wins a special mention. We find the familiar taste of teriyaki chicken that pairs with shiitake, Chioggia and leek. A surprising recipe that delights taste buds.
You can accompany your dish with genuine homemade French fries or a fresh salad with Japanese flavors. And how about tasting the famous Japanese lemonade?
If you just feel peckish, the place offers light and very tasty mini-buns as well as hors-d’oeuvres such as gyozas.
You get it now, here everything is homemade, from the bun to the dessert. If there’s still room left for the latter, you can choose between matcha tiramisu, a fruit salad lightly seasoned with sake, a dorayaki (Japanese pancakes stuffed with red bean jam) or tapioca topping mango.
