To bring about these far-reaching changes, Xavier Auguet (a former squash pro, and member of a family of fishmongers) called on former Top Chef 2015 finalist Jérémy Moscovici, as well as a genuine Japanese sushiman.
The house now boasts resolutely gastronomic pretensions, which we were able to verify during our recent test, when we sat at the large U-shaped bar, behind which cocktails, seafood platters and ultra-fresh sushi are prepared.
It's impossible not to start a meal at the Seafood Restaurant with a seafood platter (from €32 to €389 for 4 people with Imperial French caviar), or with some Uta Beach, Gillardeau, Oléron or Pousse en Claire oysters (from €15 for 6).
Then it's a pleasure to move on to the Japanese side of the menu, with everything from sashimi (from €19 for 5) to sushi (from €5 a piece) to california makis (from €24 for 8), all impeccably fresh and artfully made by the in-house Sushi Master.
And it's hard not to be tempted by Jérémy Moscovici's delicious dishes, changed daily according to the tide, and offered on a slate which, on the day of our test, featured a scallop carpaccio (€19), a lobster à la plancha at a bargain price (€49) or a fine Trouville sole (€52) weighing in at over 750 grams, which is more than enough to satisfy two hearty appetites.
Lovely desserts, also changed regularly, and a €89 tasting menu served for the whole table, through which Jérémy Moscovici introduces you to his colorful and creative culinary universe.
