Top Chef David Gallienne launches a new gourmet spot called Label Broche in the heart of the new Tables du Gourmet on the second floor of Galeries Lafayette Gourmet in Paris. The idea here is not to wow you with innovative, gourmet cuisine, but rather to offer good French cooking with traditional, comforting dishes in a modern troquet atmosphere.
David Gallienne, known for his Michelin-starred restaurant Le Jardin des Plumes in Giverny (Eure), came to public attention when he won season 11 of the TV show Top Chef in 2020. Opening at the end of April 2023, Label Broche is a corner dedicated to rotisserie cuisine in the heart of Galeries Lafayette Le Gourmet (Paris IXe).
The menu at Label Broche features products from Normandy, a testament to the quality of the region that David loves so much. On the menu:
Starters:
Rotisserie:
Toppings:
Desserts: Teurgoule
The chef's idea here was to reproduce the Sunday lunchtime roast chicken experience at Label Broche, served with gratin dauphinois or grilled vegetables, reminiscent of meals at our grandmothers'.
We liked the well-seasoned starters and the firm yet melt-in-the-mouth chicken, a sign of good quality and proper cooking. Barbecued ribs were on the menu for the day, and we loved the melt-in-the-mouth texture, accompanied by an excellent gratin dauphinois.
We recommend the tarte tatin, which arrives still warm with a dollop of cream, and the Teurgoule, a Norman rice pudding, ideal for cinnamon lovers.
The restaurant seats 30 and is open 7 days a week non-stop. Dishes can be eaten in or taken away to enjoy at home. Depending on the season and supplies, Label Broche's menu features daily specials ranging from suckling pig to leg of lamb, all cooked in two magnificent copper rotisseries.
As a reminder, David Gallienne is passionate about sharing and passing on his cuisine. He has already launched two food trucks in Normandy, opened a delicatessen in Vernon and a cooking school in Giverny, where individuals can learn French cuisine one weekend a month. He has also published a book of 90 recipes from his Michelin-starred restaurant and the TV show Top Chef, and appears every Saturday morning on the program "Le goût des rencontres" on France 3 Normandie.
Starting out as an apprentice at the age of 14, David Gallienne quickly made a name for himself after representing France at the Olympiades des métiers in Japan in 2007. He then joined Franck Quinton's Michelin-starred restaurant Le Manoir du Lys in Bagnoles-de-l'Orne (Orne), where he stayed for ten years, eventually becoming second chef. Before joining Éric Guérin as chef at Jardin des Plumes in Giverny, where he has been co-owner since 2020, he was executive chef at L'Origine in Rouen.
Label Broche is the new gourmet address for savoring authentic French cuisine. If you like good, no-frills chicken and roasted meats, David Gallienne 's new spot is for you. How about a gourmet break?
