It's official: Romain Meder will open his own restaurant in the first quarter of 2025, at 34 rue Saint-Dominique in the capital's 7th arrondissement. You may have recognized the address: it is indeed in place of the late Garance that the chef is opening his first restaurant as chef-owner in Paris.
This new address is called Prévelle, the chef revealed in a post on his Instagram account: "I wanted to share its name with you, Prévelle. A tribute to my roots and my village Neurey-lès-la-demie, whose landscape is outlined in the line of the logo. A land that has inspired me since childhood and which I see today as a link between my past journey and the present."
No precise opening date has yet been announced, as the address is currently undergoing renovation work before it can open its doors with a brand new identity. What we do know, however, is that the chef and his team will be inscribing their passion for raw materials both on the walls and on the plate.
Romain Meder's cuisine is characterized by the sublimation of plants and products in their entirety, the mastery of acid and bitter notes, and a profound respect for nature and its rough edges. If you're not familiar with the chef, you should know that he has long gravitated to the Alain Ducasse galaxy, first as chef de partie, then as executive chef at the Plaza, which was awarded 3 Michelin stars at the time, then as head of the group's various ephemeral tables, and finally as the man behind Sapid.
It was at these prestigious addresses that the chef invented the concept of naturalness, and so it's only natural that this new restaurant will be an opportunity for Romain Meder to pursue the very close links he maintains with his producers - fishermen, breeders, market gardeners - and to unveil ever more recipes that respect the land, the sea and mankind.
