Do you like Pierre Marcolini's chocolates? You'll love his pastries! Pierre Marcolini is launching a new range of pastries called"Désirs", and one thing's for sure, you'll want them once you taste them.
In Pierre Marcolini boutiques, especially in France, we're used to finding chocolate and macaroons, but pastries weren't really present. That wrong has been righted with this original new collection, which for the moment features 11 original recipes. Some will remain on the menu, while others will change with the seasons, depending on the fresh produce available at the time.
As you'd expect, this collection is all about chocolate. It combines the gourmandise of a dessert with the chef's expertise in chocolate.
With their cubic, colorful format and perfect execution, these pastries are a perfect match for the chef's visual identity. A beautiful marriage of design, modernity and tangy colors.
"I wanted to design a pastry that was innovative, modern and inspiring... To offer a signature in the form of a thin chocolate shell. Each dessert is conceived as a chocolate bonbon. An enhanced chocolate bonbon, 60 grams of pleasure. In addition to praline, ganache or caramel, I've added a pretty cookie, a fruit compote or a light cream.
I drew inspiration from the culinary world to build each cake, transposing every texture that makes up a dish. You'll find the chewiness of a cookie - de-sweetened to the max, combined with an airy part - the lightness of a mousse, a bavarois or a light cream, and the compote or insert that binds it all together.
In visual terms, I wanted to bring a real modernity through a unique cubic shape and color. To bringemotion and joie de vivre to each creation, and the aesthetic dimension that is so characteristic of the Maison," declares Pierre Marcolini.
And that's all from the chef! Recipes include Désir Fruit exotique with a house white chocolate shell, sesame meringue, vanilla mousse and exotic mango and yuzu insert.
Le Désir Fruits Rouges in a house-made white chocolate shell, gourmet cookie, vanilla mousse and red fruit insert (blackberry, morello cherry, raspberry, blackcurrant).
Désir Citron in a house white chocolate shell, surprising hazelnut dacquoise, lightly lemony cream and lemon insert.
Le Désir Framboise with its dark chocolate shell, tender chocolate cookie, nougatine crunch, vanilla milk mousse and raspberry insert.
Then there's the Désir Griotte, the Strawberry version, hazelnut, caramel, chocolate or even citrus, which should remain on the menu. So many propositions that we advise you to go and discover from this April 12, 2018.
