Cédric Grolet, voted World's Best Pastry Chef 2018 by the World's 50 Best, unveils his creations for Christmas 2020. This year, the talented chef is offering not one, not two, but three Yule logs, inspired by his Pure collection .
Enough to satisfy all gourmands and gourmets.
An airy, pollen-sprinkled mousse conceals an astonishing montage: lying on a honey and pollen crunch are a dacquoise and a meringue topped with forest honey. A lemon gel with lavender nectar adds a touch of chewiness thanks to the lemon supremes and confits that make it up. A pollen gel completes this resolutely original dessert.
The Bûche Pure Miel is also available at Restaurant Le Dalí, from December 15 to 27, 2020, for €25 a slice.

In this 100% chocolate log, the dark gold of the Manufacture de Chocolat Alain Ducasse comes in a multitude of textures. A base of praline, cocoa nibs and fleur de sel is cut out , on which rests a soft flourless cookie topped with Alain Ducasse chocolate caramel from Peru. A cocoa gel is added, and the whole is covered with a coat of chocolate mousse, iced and sprinkled with Peruvian chocolate chips.

The crunchy roasted coconut praline contrasts with the soft meringue and coconut powder dacquoise. It's topped with a lemon peppercorn gel. A coconut praline coulant and a gel made from fresh coconut flesh enhance the whole. A mascarpone-roasted coconut mousse covers the log, which is then glazed with coconut milk and sprinkled with shredded coconut.
