A Yule log that pays homage to French products, that's the beautiful creation of Fouquet's Paris for this holiday season 2020. Indeed, Nicolas Paciello, the Parisian Maison's head pastry chef, has imagined an elegant log inspired by the flavors of Montélimar nougat and composed exclusively of products from French agriculture.
So, what does Louis Fouquet's Yule log have in store for us? Set on a nougat made according to the traditional Montélimar recipe, this log covered with honey meringue conceals a soft Montélimar almond cookie and a Corsican orange cream surrounded by a honey-almond mousse.
A real delight, light on the palate, the well-dosed honey blends perfectly with the taste of almonds. And the homemade nougat base is just divine, we love it.
To create this made-in-France log, the Pastry Chef atHôtel Barrière Le Fouquet's Paris selected almonds from producer Hervé Lauzier near Montélimar, honey from Silvère Bru in Grants, and candied oranges from Corsica by Marcel Santini, among others.
