For its second Christmas, the new CinqSens patisserie, founded by William Assouline and Nicolas Paciello, has come up with an unusual log. This year, the chef has teamed up with Chocologist Victoire Finaz to give pride of place to cocoa, of course.
La Cabosse is the name of this Yule log , which is sure to be a hit this Christmas. It's a lactose-free log which, as its name suggests, is shaped like a cabosse. It features 2 key ingredients: cocoa and mucilage.
It's made up of a thin shell of crunchy cocoa butter, a mousse of unroasted cocoa beans, a ganache with mucilage (the famous cocoa pulp) and an intense chocolate heart, all resting on a crunchy bed of puffed rice with cocoa nibs. What a delight!
Please note that this log is for 8 people and costs 79€. Available from December 14 to 26, 2021. The curious can also discover it in individual format in boutiques in the 15th arrondissement and Pantin for 9.90€ from December 4, 2021 to January 2, 2022.
