Eddie Benghanem's exceptional fir Yule log for the Trianon Palace Versailles 2023

For several years now, the pastry chef at the Trianon Palace in Versailles, Eddie Benghanem, has been delighting us with his Christmas creations. After a fantasy tree trunk and a Christmas guinea fowl two years ago, and an origami last year, he's now given us a beautiful, regressive fir tree!

Inspired by childhood memories and family traditions, Benghanem's "Mon beau Sapin" Yule Log pays tribute to the fir tree, the eternal symbol of the festive season.

The log, available from December 16 to 31, 2023, is a visual and gustatory masterpiece. Presented like a work of art on the table, it symbolizes nostalgia and the shared joys of family gatherings. Benghanem, renowned for its haute gastronomie creations, continues to surprise with this new signature log. Reflecting tradition and cherished family moments, Mon Beau Sapin is a tribute to the Waldorf Astoria Hotels & Resorts group's values of transmission, history and heritage.

The composition of the Mon Beau Sapin log remains consensual to appeal to young and old alike, because let's not forget, Christmas is above all a family affair for all ages. This creation combines a light mousse with two vanillas from Madagascar and Tahiti, a creamy ganache with 60% milk chocolate (from Peru), a crunchy pecan and a cookie with dried fruit and salted butter caramel with maple syrup. This blend of flavors and textures creates a beautiful harmony, reminiscent of the sweet flavors of childhood.

Not too sweet and, all in all, rather light, we liked the crunchiness of the pecan cookie and the lightness of the mousse for vanilla-addicts.
