In France, the history of beer dates back to the 7th century. King Dagobert created the first monastery to make cervoise, and brought together brewers in a guild to create a charter governing beer-making. The art of brewing was then entrusted to the monks. In the 13th century, brewing began to emerge from the monasteries, and Saint-Louis drew up the first statutes of the Paris Brewers' Guild in 1268. In 1489, the term"bière" was adopted by master brewers, replacing the word "cervoise".
500 years later, Parisian craft beer is making a comeback, with Parisians now keen to consume locally and responsibly.
