After months in the dark, the kitchens at Point Ephémère are back in action with a brand new "light kitchen " concept: Mouflet. Conceived by Zac and David, this transparent dark kitchen features the traditional English muffin, revisited with a made-in-France twist.
What's more, Mouflet uses local, seasonal produce and sustainably-sourced fish, and makes its recipes from scratch. For example, the bread, made with French flour from a family-run mill 80km from Paris, is leavened and baked on site, as is the rainbow trout from France's oldest fish farm, which issmoked over beechwood directly on the Point Ephémère roof .
Label Rouge pork, from Maison Montalet, is mixed with a secret blend of spices, then cooked at low temperature for 12 hours, before being shredded. In short, nothing but the best!

On the sides, Mouflet offers gourmets crispy-melt potato croquettes, creamy kale and coleslaw, all homemade, of course. And if you're still hungry after all that, you'll love the apple and walnut crumble for dessert , with apple compote smoked on site, or the sweet potato and salted butter delight.
