Within the Jardins de la Canopée, set front row of the new Pinault collection for modern art - set within the former Bourse de Paris - Baltard au Louvre welcomes us in a verdant setting.
Renovated in 2017, architect Sonia Rogalski - whose work we discovered at Pirouette and Zébulon – entirely rethought the place and carried out a very successful makeover. Metal glass roof, mosaics, cement tiles… echo with the splendid canopy on the façade that takes us to the Art Déco era straight away. Thanks to the openings, we are completely set in the vegetation with an unobstructed view over the Sainte-Eustache Church.
In the kitchen, the talented chef Ewout Vranckx runs the team. No need to say that he worked with the bests such as at Pavillon Ledoyen, Cinq, Le Meurice, Plaza Athénée or last but not least, at the Park Hyatt Vendôme. First on the run for a Michelin star, Baltard au Louvre has had to rethought the menu after the lockdown and since many visitors have come in to the Pinault Foundation.
The chef now aims at a brasserie-inspired menu, more affordable, although the goal of an upper-end service is being considered.
After a merry cocktail, go for the black garlic, basil and parmesan ravioli, the leek and prune casserole or the Provence tomatoes with watermelon.
As a main course, enjoy the lamb's shoulder for 2 or 3 served with a side of mashed potatoes and fresh vegetables. Go for the pork rib with chimichurri sauce, or the yellow pollock and brown butter.
Last but not least, we go for the exotic Vacherin, roasted spicy figs, and the chocolate tartlet with vanilla ice cream, of course.
