At first, The Butchers of Paname (Paname meaning Paris), 4 friends who know their share about meat and wine.
Laurent and Philip, meat traders at the Rungis market, select the best pieces for you. Smoking and salted processes are carried out at the restaurant.
The chef, Nicolas, cooks with creative and love of good food. And speaking of Jean-Marc, he choses the perfect wine that goes with the ordered dish!
In short, you’ve got it now, at The Butchers of Paname, you’re well taken care of!
In terms of décor, when we walk by this small street in Paris 6th arrondissement, we couldn’t imagine how different atmospheres are offered.
On the ground floor, you have the bar with a few tables and pedestal tables looking on the kitchen.
On the first floor, a wonderful dining room with its impressive chandelier on the ceiling. In the basement, a smoking room with cigars on sale, and the wonderful cellar where many tastings are organized.
But, tell me, what do we eat at the nice Butchers of Paname?
First things first, let yourself go for a wonderful board with homemade smoked and salted meat (€12). You can share spring rolls with side of beef and mushrooms, Hoisin sauce (€14) that are full of originality. And if you love to play to keep things interesting: try the veal tongue fingers with tartare sauce (€13). Everything you need to make up with this piece we rarely eat!
The surprising veal tongue fingers and their tartare sauce
In terms of meat, we could enjoy a cured side of beef perfectly cook (€33). But you also have the cured beef steak for 2 of course.
A good choice of pieces carefully selected, and all cured on the spot.
You can choose the homemade sides and sauces between the pan-fried organic Richelieu vegetables (vegetables come from sustainable farming and Aude and Vincent Tessier’s kitchen garden in Richelieu), the pommes de terre Dauphine, the French fries…
Or if you want, you can have dishes such as confit Peking suckling pig, covered in green cabbage and cilantro butter (€28), the pan-fried veal kidneys, seasoned juice, macaroni gratin with parmesan (€36).
Wine passionate Jean-Marc will manage to advises you just right so that you can pick the perfect wine.
And if you feel you still have room left for something sweet, don’t miss the chocolate and praline entremets (€10) or the lemon tart with lemon from Nice and basil (€10).
And if you want, you can have an after-dinner liqueur such as a plantation rum, 10 years of age (€13), or a Red Breast whiskey 12 years of age (€10).
If you really love good meats, The Butchers of Paname is the place to be!
