Les Tables d'Augustin is the idea of a chef, Hervé Deniel, with a prestigious and exemplary career.
Indeed, this chef from the Vendée region has had a taste for cooking since his early childhood with his mother, but also his grandparents.
It was in their garden that he discovered chickens, ducks, vegetable garden, orchard... Everything you need to make good food.
Later, he continued his apprenticeship with Nicolas Le Bec in Lyon, and then moved to Paris to join the prestigious Ambroisie and George V restaurants, where he held various positions.
He then decided to start his own business, opening this 22-seat gastronomic bistro in a working-class neighborhood, which bears the name of his son Augustin.
Although the thirty-year-old chef has worked in some of the most famous restaurants, his aim in opening this address was to offer simplicity and conviviality, without forgetting the high quality of the food.
We tested it and his bet is more than successful.
The restaurant looks like a small Parisian apartment.
All in length, it offers you a view on the kitchen at the back. Everything is decorated with sobriety and taste. To make us feel even more at home, the walls are decorated with photos of his son or one of his favorite movies: "Pulp Fiction".
As for the menu, the chef works with seasonal products and takes particular care to use everything and never throw anything away.
He likes to work with simple products to which he adds his gastronomic touch or, on the contrary, to start with noble products that he works with simplicity.
The cooking is mastered, the seasonings perfect.
As a starter, we discovered the First Green Asparagus of Provence with Colonnata Bacon (12€), but also the Carpaccio of Yellow Pollack and Osciètre Caviar, Mango Vinaigrette, Edamame Beans and Langoustine Blanc Manger (12€ and + 10€ for the caviar on request), which our taste buds still remember.
For the main course, a first-rate Calf's sweetbread, Carrots of the Sands with Turmeric and Cevennes Onion Tomb (23€), cooked to perfection. You also have a Grosse Rouelle de Cochon de Lait Farcie Snackée et Topinambour au Jus (23€) or a Dos de Cabillaud Basse Température en Feuille de Nori, Mousseline de Butternut et Pesto d'ail des Ours (23€). Save some room for dessert and especially the Surprise Easter Egg and its Hot Caramel (10€), a real treat for gourmets.

Les Tables d'Augustin is one of those addresses that have many surprises in store for us.
We liked the high quality and rare finesse of the cuisine, all served in a no-frills setting.
The kindness of the chef who generously shares his passion for cooking. And not to spoil the pleasure, the very affordable prices for the proposed cuisine.
We recommend you to go there with your eyes closed!
