At the end of May, the Artisan de la Truffe family expanded with the arrival of a new address nestling in the heart of the Beaubourg district.
Located at no. 19 rue Rambuteau, this new gourmet spot, with around 30 seats, follows the same concept as its big brothers.
Chef Arnaud Vachet 's signature truffle classics include risotto, tagliatelle, burger, croque-monsieur and truffle brouillade.
There are also dishes to share, with cheese and charcuterie boards featuring truffles, of course, and pizzettas.
But the menu also includes a number of creations, such as mushroom and truffle ravioli, or royal sea bream ceviche with truffle.
The tasting hasn't even started yet, but our mouths are already watering; the very pleasant aroma of truffles can be smelled as soon as we enter the restaurant, thanks in particular to its very pleasant open kitchen.
To begin, we let ourselves be guided by the very friendly waitress and opt for Croque en Sel tartines and Pugliese burrata with truffles.
One bite is all it takes to satisfy my taste buds, thanks to this summer truffle delicately cut into very thin strips and simply placed on slices of toasted bread sublimated by truffle butter.
Here, the product stands on its own, the truffle is exquisite and these toasted toasts are a pleasure to savor.
Opposite, the ever-popular Pugliese burrata with colorful summer tomatoes.
Next, I turn to a creative dish: perfectly cooked roasted pollack with cockles, topped with crunchy root vegetables and a beurre blanc with cockle juice.
My acolyte opts for the truffle chicken ballottine with its vegetable jardinière and truffle carrot purée.

A pleasure for the taste buds as well as the eyes, these two dishes are two great successes offering a perfect balance between summer flavors and the summer truffle.
To finish, I choose the crème brûlée flavored with truffle praline. A real treat.

On the other side of the room, it's time for the famous and classic café gourmand, where truffles have obviously found their place.
The best thing about this new address? Its small sunny terrace.
The restaurant also offers a lunchtime menu at €22, with a choice of truffle tagliatelle, truffle brouillade or Croque-Monsieur de l'Artisan, accompanied by a gourmet coffee or tea.
And for gourmets in a hurry, the restaurant offers a selection of its best-sellers to take home or to the office: salads, truffle sandwiches and various pasta and risotto recipes...
And let's not forget the grocery corner, where you'll find some of the restaurant's flagship products: cashews, potato chips, olive oil... all with truffles, of course!
