If you're looking for a trendy, tasty and original new restaurant, then head for Paris's 12th arrondissement.
It's here, on the Quai de la Râpée, and more precisely on the boat that hosts the famous Concrète parties, that PanSoul has taken up residence.
Behind this new address is the prolific Agence Surprize, already responsible for La Friche Richard Lenoir, the Weather Festival, Hors-Série evenings and the Concrète .
For PanSoul, a tribute to the first Motorbass album,Agence Surprize has imagined a warm and inviting place, with a regularly changing seasonal menu, short-run sourcing, natural wines, a rotisserie à la ficelle (vertical), meats from butcher Tristan Seguin, fish sourced directly from Morbihan and Finistère... all orchestrated by Chef Alexandre Marchon.
This former advertising account manager decided to follow his passion: cooking. After setting up a home chef service, he is now in charge of creating Maison Foucade's savory menu. In 2017, Alexandre was also asked to rethink a 100% home-made menu for Monsieur Culbuto. Today, he is at the helm of the PanSoul restaurant.
On the menu? Two starters, two main courses, two desserts that evolve according to arrivals, with, for example, mackerel from Concarneau cooked with a blowtorch and carrot condiments at €11; clams from the Bay of Biscay, accompanied by green asparagus, white miso butter and Pecorino Fiore Sardo at €25; or a 75% Tanzanian chocolate ganache with tonka bean, hazelnut crumble and marjoram crème montée at €10.
As the weather gets warmer, barbecue is also in the spotlight, with ribs de cochon, faux filet Montillos de Saint-Jacques de Compostelle, Xistora (Basque sausage with Espelette pepper) and of course mackerel and langoustines...all cooked vertically and slowly.
The best part? The possibility of enjoying these delicious dishes on the quay or on the barge with your feet in the water!
