Located at 142, avenue des Champs-Elysées, the Maison du Danemark (Denmark house) invites us to discover the culture of the country through exhibitions, screenings and its two restaurants: a gastronomic restaurant, Copenhague and the brasserie, Flora Danica.
In 2017, the premise’s décor has been entirely redesigned by Danish design star couple: Danish architect Stine Gam and Italian architect Enrico Fratesi. The cooking part is entrusted to Andreas Møller, a 34-year old chef from Copenhagen and heir of the New Nordic Cuisine created in the early 2000 under the initiative and creativity of chefs such as Claus Meyer or René Redzepi from the restaurant Noma and several times elected best restaurant in the world by 50 best restaurants.
Assisted by French chef Guillaume Leray, Andreas Møller signs a very simple menu that concentrates all dishes from Danish cuisine. The Smørrebrød (the “ø” is pronounced like the “u” in butter) itself is an institution in Lars von Trier’s country. This famous dish is made of a black rye bread slice covered in butter and topped with herring or mackerel.
Treat yourself with homemade taramasalata served with blinis and the one-side cooked salmon and its warm beetroot and its potato salad. Or what about the salmon heart à la Gilbert Becaud, a famous French singer who asks to get salmon sliced in a certain way, that ended up on the restaurant menu.
In terms of meats, the finely sliced beef tartare is a treat and if you have some room left for a dessert, go for the light rice pudding based on whipped cream or give a go to the fresh red berries soup called Rødgrød.
An address just as we like them to be: a theme, a small menu, good ingredients and without fuss. Yet, we regret the absence of organic and nature wines even more since Denmark is well ahead regarding a healthier and more organic nutrition. This last point won’t prevent us from coming back to taste the Andreas Møller’s gastronomic restaurant, Copenhague, located upstairs.
