Like many pastry chefs, Kevin Lacote has imagined logs for Christmas 2018.
This talented pastry chef, based in his KL pâtisserie since 2016, likes to revisit pastry classics with delicacy: the Saint-Honoré (with pecan, please!), the chocolate éclair, the Millefeuille, he makes us melt with regressive recipes that remind us of all those family tea parties.
His exceptional log, named Alba, is very interesting: with a hazelnut mousse, an orange-passion confit, a praline cookie and a hazelnut streusel, this log reminds us that the chef is a great gourmand who knows how to balance sugar with subtly tangy notes. And its white fir tree shape makes it a beautiful log to bring to the table to impress your guests!
Two other logs are on offer for Christmas 2018:
The CARAMANIA log delights caramel lovers, with a chocolate mousse, caramel milk in a caramel mounted ganache, enhanced with a Croustillant sablé Breton, Macadamia nuts and set on a coconut dacquoise.
And if you'd think Kevin Lacote's chocolate log was classic, with its guanaja chocolate mousse, the CHOCOMANIA log surprises with its lime and flourless chocolate cookie!
