Every year, they become more and more beautiful, and each one is just as gourmet as the next. I'm talking about the famous Yule logs that take pride of place on our tables for the festive season!
While some prefer to play it safe with authentic flavors, others let their imaginations run wild and come up with incredible creations. Such is the case this year withHugues Pouget, pastry chef at Hugo & Victor, who this winter has created the Bûche K.
Imagined in partnership with Kaviari, this original creation is nestled in a caviar case.
Inside, the pastry chef has chosen a dacquoise cookie (flourless) with yellow lemon zest, delicately topped with a Konatsu lemon cream (a citrus fruit native to Japan), a Konatsu light cream and a mixture of pineapple brunoise and Konatsu jelly.
To top it all off, this log hides lemon Japanese pearls and lime zest as a finishing touch. For best tasting, opt for the spoon!
