On the occasion of Easter 2024, pastry chef Nicolas Guercio, true captain of flavors aboard theHôtel Lutetia Paris, once again reveals the full extent of his talent in a chocolate creation straight from the depths of the sea. Embark with him on a gustatory voyage to the high seas with his latest creation: the Great Humpback Whale.

Like a seasoned sailor, Guercio raises the anchor of tradition to lead us into the tumultuous waters of gourmandise with his Signature Egg, a majestic humpback whale, a symbol of the hotel's commitment to preserving the planet and its marine inhabitants.

The marine creature, weighing a generous 1.1kg, is fashioned in a surprising seaweed-infused chocolate, created exclusively by the chef and his team. From the very first bite, the grainy texture of Oko 73% Peru dark chocolate, like a fine sand beach, awakens the taste buds before revealing its salty side. This is followed by the iodized flavors of sea lettuce, reminiscent of the salty spray of the waves, not forgetting the double shell, enclosing a surprisingly generous black sesame praline.

And, like a flotilla of whales playing in turquoise waters, the"Les Baleineaux" trio completes this marine collection, with all bases made of white chocolate. These Easter eggs in the shape of little cetaceans promise a sweet adventure as playful as it is delicious, perfect for budding sailors. Filled with fried food, they come in three flavors: chocolate/raspberry, milk chocolate and white chocolate double shell or Illanka Grand Cru 63% dark chocolate.

"Little fish in the belly of a whale (...) For once, frying makes sense!" laughs the pastry chef.
