And this year, pastry chef Maxime Frédéric of Cheval Blanc Paris has once again surprised us with an original creation that's off the beaten track. The grandson of a Normandy dairy farmer, Maxime Frédéric's family are all farmers, and he's proud of his roots, which he asserts and supports.
This year, the chef has decided to put the spotlight on French cereal producers from several regions of France. To showcase them, he has designed a windmill inspired by the Cotentin educational windmill in Fierville-Les-Mines.
Right from the second floor, this Easter egg bewitches us with its delicious corn praline from the Jura region. On the second floor, its rice praline allows the palate to savor the power of the Camargue terroir. Finally, the top layer, with spelt and buckwheat, delights with its strength and light hazelnut taste. The roof reveals a buckwheat caramel heart, Chef Maxime Frédéric's signature. Try it and you'll love it. The entire structure is made from 70% dark chocolate by Nicolas Berger.
To achieve his goal of a 100% agricultural product, Maxime Frédéric has worked exclusively with Guérande salt from Mulon de Pen Bron. For the pickiest among you, the Cheval Blanc Easter Egg-Mill is practically vegan, as the chocolate in the upper part replaces milk with oats. We love the discovery of different textures, the taste of pralines enhanced by cereals and the ultra-regressive buckwheat caramel.
And just for fun, note that this entirely edible windmill, assembled like a Lego, actually works! If you turn the crank on the back of the mill, the propellers turn.
