To discover and savor this best baguette of French tradition of the City of Paris, 2023 edition, you must go to 44 rue des Pyrénées and push the doors of the bakery "Au levain des Pyrénées". Tharshan Selvarajah is ahead of Thierry Guyot of the Guyot bakery in the 5th arrondissement. Jocelyn Lohezic of Maison Lohezic, in the 17th district of the capital, finishes third in this 2023 ranking.
This competition for the best traditional French baguette has been organized every year for 30 years by the City of Paris. It puts in competition the traditional baguettes of the bakers of the French capital.
This year, during the competition organized on May 10th in the center of the capital, no less than 126 baguettes were selected (out of 175 submitted), tested and tasted. To win the Grand Prix for the best traditional baguette in Paris, the products submitted had to measure between 50 and 55 cm, weigh between 250 and 270 grams and have a salt content of 18 grams per kilo of flour.
The baguettes were then judged according to several criteria: baking, taste, crumb, honeycombing and appearance. All bakers in the capital were invited to participate in this Grand Prix de la baguette de Paris 2023, organized in partnership with the Syndicat des boulangers-pâtissiers du Grand Paris.
This year, the jury included professionals, as well as six Parisians chosen at random, gathered alongsideOlivia Polski, deputy mayor of Paris in charge of trade, crafts, liberal and independent professions, as well as representatives of professional federations, including Franck Thomasse, president of the Bakery Union of Greater Paris.
On Wednesday, May 10, 2023, the members of the jury took the time to observe, touch, smell and taste these numerous baguettes, the smell of which pleasantly perfumed the premises of the headquarters of the Greater Paris Bakers' Union, located in the 4th arrondissement of the capital. And the jury was not idle, since each member had to taste no less than 62 baguettes in the space of 4 hours! Note that the uneaten baguettes were given to the association La Chorba.
Congratulations to the lucky winner, and to the many other participants!
In addition to the prize of 4000€, the prize for the Best Traditional Baguette of Paris brings to the brand a great notoriety and the honor of supplying the kitchens of the Mayor of Paris for one year. Note that the Mayor of Paris, Anne Hidalgo, will present the prize to the winning bakery during the inauguration of the traditional bread festival, scheduled for May 13 on the Parvis de Notre-Dame.
