Sébastien Lefrançois is a 100% artisanal baker who relies on raw ingredients and time-honored know-how for his bakery. Come and discover his daily life and the behind-the-scenes aspects of this unusual bakery, during a visit offered by the baker himself, followed by a tasting!
A former dancer and choreographer in the world of live performance, Sébastien Lefrançois became a baker a few years ago. He now offers his breads every week at 6b, Saint-Denis' third-place, located on the banks of the Canal (and not far from the RER and Transilien stations). From petit épeautre bread to fougasse with olives, from the surprising pain au cacao to Punchy with dates and oilseeds, Sébastien Lefrançois innovates and reinvents classic bakery breads. In fact, he calls himself an "alternative baker", and with good reason: he chooses to use old-fashioned, artisanal flours for his bread, offers organic recipes with sourdough, and kneads by hand, without a kneading machine. Every day, his batches are baked in a wood-fired oven.
During your visit, you'll learn all about Sébastien Lefrançois' techniques, ingredients and recipes. You'll also be able to taste some of his breads, and buy some directly on site if you wish.
