You've heard of patisseries, but have you heard of Boulangerie Christophe Michalak? Originally named Kopain when it opened in 2021, the Boulangerie now bears the chef's name! Head to the capital's 10th arrondissement, in the bustling rue du Faubourg Poissonnière, right next door to its Masterclass café, for a treat.
You may not know it, but it's not all that surprising that Christophe Michalak has opened a bakery. Indeed, the pastry chef began his apprenticeship at the age of 15 as a baker, not a pastry chef! And while his subsequent steps led him into the sweet world of cakes, he always had in the back of his mind the desire to take bread and viennoiserie a step further.
After first satisfying his desire for a bakery at the Plaza Athénée, where he was able to work on a whole new range of viennoiseries and petits pains, including kouglofs, sugar tarts and filled brioches, the chef was then able to realize his desire for an artisan bakery.
According to Michalak, La Boulangerie Michalak is a neighborhood bakery with no chi-chi, where working with dough (bread, brioche, pie, viennoiserie, cake!) is at the heart of the project. You'll fall for the bottereaux vendéens, the bretzel croissants, the tangy apple tart or the gluten-free creations like the chestnut flan.
Organic flours, AOP butter, natural sourdoughs, organic eggs, long-lasting fermentations, AOC oil and olives from the Vallée des Baux de Provence... These are just some of the essentials that await you at Boulangerie Michalak.
