Recipe for Pierre Marcolini's chocolate pancakes

25 minutes of preparation
For 4 people

Required equipment:
- 1 salad bowl
- 1 hand whisk
- 1 pancake pan
- 1 small ladle
- 1 damp cloth

Ingredients:
300g butter
160g of flour
1 nice tablespoon of cocoa powder (15g)
1 teaspoon of peanut oil (3,5g)
175 g of powdered sugar
5 eggs
18 cl of whole milk

Preparation:

Gently melt the butter in the saucepan, to obtain a nutty butter.

Mix the flour, cocoa and powdered sugar in a large bowl.

Add the eggs one by one, beating well at each step.

Finish by adding the hazelnut butter and the whole milk.

Mix well. Let rest 1 hour, at room temperature, putting a wet cloth on the bowl.

When you are ready to make the pancakes, use a ladle to measure out the amount of batter that you will pour into the pan. Turn the pan (not too hot) from bottom to top to coat it with the batter. Once it is well distributed, let it cook for 1 minute on each side and it's ready!

Chef's tip: To have a good time with friends at snack time, you can prepare the pancakes in advance. To do this, remember to sprinkle each pancake with powdered sugar or, better still, cocoa powder. This way they will stand out better from the pile of pancakes.
