The recipe of the fruit salad of Nina Métayer

For 4 people

Ingredients :
Apples 5 pieces
Pear 5 pieces
Organic yellow lemon 2 pieces
Walnut 150g
Hazelnut 150g
Honey 75g
Brown sugar 50g
Butter 50g

Preparation:

- Roast the hazelnuts in the oven at 150°C for 40 minutes, let them cool down and chop them roughly.

- Peel and cut 4 apples into quarters (6 to 8 quarters per apple)

- Zest the lemons with a grater, reserve the zest with a small pinch of sugar.

- In a frying pan over low heat, melt the brown sugar. Once melted, add the butter and the apple wedges and let cook and caramelize for 5 minutes.

- Add the juice of one of the lemons and the honey and cook for another 5 minutes.

- Drain the apples and let them cool, keep the cooking juice.

- Peel and cut pears into quarters (6 to 8 quarters per pear), cut mini raw apple quarters with the last apple. Add the juice of the other lemon and the zest of the lemons.

- Cut the nuts into small pieces.

Assembly:

- Using a circle if you have one, make a rosette with the cooked apple wedges, place the lemon pear wedges on top.

- Delicately place chopped roasted hazelnuts and small pieces of walnut on top.

- Finish with the mini raw apple wedges to decorate.

- Warm the cooking juices and gently drizzle over the rosette just before serving.
