Food lovers beware! Join us at La Nouvelle Seine for a unique culinary experience from October 4 to December 31, 2023. The famous contestant from the first season of Drag Race France, La Big Bertha, will be donning her chef's costume to delight the palates of Parisians. Teaming up with Gaël Marques and Muriel Aublet-Cuvelier, she promises a gastronomic menu full of love and daring!
After conquering the world of burlesque shows, La Big Bertha reveals herself in her new passion: cooking. For her, every dish is a declaration of love, a passion inherited from the women who have marked her life. She is supported in this adventure by Gaël Marques. Muriel Aublet-Cuvelier, an alumnus of the prestigious École Nationale Supérieure de la Pâtisserie Ducasse, brings her sweet mastery to the team. With a background in haute pâtisserie and growing popularity thanks to her YouTube channel Les Secrets de Muriel, she's sure to surprise with her creations.
Guests can look forward to dishes such as Carpaccio de Saint-Jacques with herb-infused gin gel, or Pressé de bœuf bourguignon en sauce with dark chocolate. And to finish on a high note, the Queen's Pavlova will take center stage, combining fresh pear compote, Tonka bean and light vanilla cream.
Our test of the menu at La Big Bertha's culinary residence at La Nouvelle Seine :
A menu we were able to test for dinner. For starters, we were tempted by the scallop carpaccio, herb-infused gin gel, granny smith and black sesame tuile, as well as the cauliflower cremeux, mushroom tombé and parmesan popcorn. The first starter is absolutely divine, the saltiness of the scallops blending particularly well with the sweet acidity of the granny smith. The gin gel, with its hint of elderberry, adds just the right amount of pep and sweetness! As for the creaminess, it's particularly tasty, ideal for chilly autumn evenings. The parmesan popcorn adds a touch of originality so characteristic of the queen of the house.
For the main course, we opted for the pressé de bœuf bourguignon en sauce, dark chocolate, vegetables and steamed apples, as well as the herb and citrus-crusted cod, flat beans, broad beans and burnt grapefruit. Two very tasty dishes, the first with its chocolate, a real Proust's madeleine for all those who have known this dish revisited by our grandmothers, and the second with its crust giving a kick to the fish.
As for desserts, the chou craquelin, light pecan mousseline cream, praline flowing heart, gianduja sauce, and the Queen's Pavlova, featuring fresh pear compote, Tonka beans, chestnut confit and light vanilla cream, ended the meal on a sweet note, but not too sweet. Two desserts in perfect harmony, created by chef Muriel Aublet-Cuvelier. A real treat, this dinner, we tell you!
This culinary residency is part of La Nouvelle Seine, the magnificent barge moored at the foot of Notre-Dame de Paris, whose vocation is to reveal the talents of tomorrow, whether artistic or culinary. An unmissable event for gourmets and the curious! Shall we reserve a table, folks?
