Sami Bouattour from the Boulangerie Brun defeats last year’s winners Florian Charles and Mickaël Reydellet from the La Parisienne bakery, and wins the Meilleure baguette de Paris (Best baguette in Paris) 2017 contest.
Thursday May 4, at the Syndicat des Boulangers (Bakers Union), over 200 craftsmen dropped off their baguettes in order to win Grand Prix de la meilleure baguette de Paris 2017 (Best baguette in Paris 2017 Grand Prix). To do so, the baguettes must be between 55 and 65 cm long, weigh between 250 and 300 grams and include 18 grams of salt per kilo of flour.
All afternoon long, the jury tasted and judged these baguettes according to 5 criteria scored on 4 points: baking, taste, crumb, aspect and honeycomb. After a several-hour long deliberation, the verdict is in: Sami Bouattour and Boulangerie Brun are enthroned Best baguette in Paris 2017.
All artisan bakers of the capital have been invited to take part in the contest organized in partnership with the Chambre Professionnelle des Artisans Boulangers-Pâtissiers (Professional chamber of artisan bakers) in Paris, in Hauts-de-Seine, in Seine-Saint-Denis and in Val-de-Marne.
