Because summer is the ideal season for harvesting nutrient-packed organic eggs, Antoine Westermann has decided to put this ingredient on the menu at Coq Rico with his Z'Oeufs Party: free-range eggs from Landes hens, gourmet mouillettes and multicolored Le Creuset egg cups.
From July to September, the traditional mouillettes that usually accompany our boiled eggs are revisited in three recipes: with artichoke heart cream and fleur de sel, with fresh coriander pesto, or with coconut bean hummus with preserved lemon and roasted sesame seeds.
The eggs are all from hens raised on local, organic feed , selected by farmer Jérôme Gaudin and the collective of breeders at the Biogalline farm in Saint Jean de Thurac. Each egg is served in colorful Le Creuset egg cups, whose ceramic construction keeps the egg at the right temperature throughout the tasting experience.
