Former Top Chef contestant Thibaut Spiwack took flight a long time ago. First, with the opening ofAnona, quickly rewarded with a green star for its commitment to sustainable cuisine that respects people and the environment, and then, even more prestigiously,a Michelinstar.
Following the opening of a street-food stall, Starving Club, and a summer residency in the verdant gardens of the Musée Carnavalet, the chef is embarking on a new adventure with the opening, at the end of next January, of a new restaurant, perched on the heights of the majestic Philharmonie de Paris building designed by Jean Nouvel. Now that's good news!
High above the rooftops of the capital, this new restaurant called L'Envol will be the little nest of chef Spiwack and chef Sarah Ledu, both of whom share the same philosophy of characterful, healthy, straightforward cooking, using locally sourced produce in season from small producers. It's a cuisine that emphasizes plant-based ingredients, but not only.
