Liran Tal's new summer offerings promise an explosion of flavors. They include dishes such as

  • Eggplant Massabaha with date vinegar (14€),
  • fish crudo served on vine leaves stuffed with freekeh, sublimated by an apricot coulis with timut pepper (17€),
  • or the charcoal fish with chorizo & tomato beurre blanc (€29), a perfect blend of Levantine and French influences.

Each dish is an invitation to discover the chef's signature cuisine, which moves between the bewitching flavors of the Mediterranean, the refinement of French gastronomy and the audacity of Japanese and Scandinavian cuisine.

Wines that invite discovery

To accompany these summer dishes, Emmanuel Delmas, former sommelier at such top establishments asPlaza Athénée and La Tour d'Argent, has created a list of organic, biodynamic and natural wines. These low-tannin, easy-to-digest wines come from French, Spanish, Italian, Armenian and Greek terroirs, and are produced by winegrowers who are meticulous and sincere in their approach.

Whether Sicilian wine from the volcanic land of Lipari, or Armenian wine from Mount Ararat, each bottle is chosen for its freshness and vitality, harmonizing perfectly with Liran Tal's dishes. Offered as an accompaniment to the 6 or 8-step menu, the food & wine pairing will take you on a journey through the diverse terroirs of the multinational menu.

In addition to wines, Alluma offers seasonal house cocktails, created from fresh seasonal fruits and vegetables, and homemade syrups created by the chef. An iconic example is the Beetroot Martini, a cocktail made with beetroot-infused vodka, lemon, green apple juice, date syrup and elongated pepper syrup. These cocktails are the perfect way to start or end a summer meal at Alluma.

The restaurant, designed by Nathalie Rozencwajg of Name Architecture, offers a sober, poetic setting. The central decorative element is a mural inspired by Moroccan motifs and Ashkenazi lace, symbolizing cultural crossbreeding. This elegant, minimalist decor creates a soothing atmosphere, perfect for enjoying Liran Tal's culinary creations.

Alluma is located at 151, rue Saint-Maur, Paris 11th.

The restaurant is open Tuesday to Saturday from 7:30pm to 11:30pm, offering à la carte service (starters from 10 to 17 euros, main courses from 26 euros) or tasting menus at 64 euros for 6 steps and 89 euros for 8 steps.

The restaurant is also open on Thursdays and Fridays for lunch from 12pm to 2.30pm, offering a lunch menu ranging from 18 to 25 euros.
