The Hôtel du Collectionneur is putting the Great Cold in the spotlight this holiday season. TheHôtel du Collectionneur's Executive Chef, Joël Veyssière, and his team of pastry chefs naturally chose to draw inspiration from Russian architecture and its icy climate.
Indeed, he wanted to reproduce the bulbous steeples of Russian churches, giving this shape to his "Douceur du Grand Nord" log.
On the flavor side, he combined citrus and chocolate, adding a little regressive touch with gingerbread .
Palets of orange crème brûlée, vanilla ivory mousse, all on a crunchy puffed rice crust! We discover different textures in each layer, but when tasted together, they form a tasty, harmonious whole. We love the lightness of the log, the freshness of the orange insert and the pep of the spices. A lovely combination that makes this log a great success.
Sweetness and originality are the order of the day, and a little return to childhood reminds us of the magic of Christmas...
