We're off to discover Pierre Hermé's Christmas and 2024 holiday creations. This year, we discover a signature log called Fragment, which we adored, and a Pièce d'Exception called Révélation. When the art of Dimitri Rybaltchenko joins forces with haute pâtisserie for our greatest pleasure.

For the festive season, Pierre Hermé takes us on a world tour of flavors. His Christmas and New Year collection is the fruit of a partnership with artist Dimitri Rybaltchenko, and offers an unprecedented culinary voyage. These logs, inspired by minerals and crystalline rocks, represent an exploration into the heart of the earth.

Pierre par Pierre: de la Nature au Goût" is a celebration of art and the Earth. Dimitri Rybaltchenko 's creations play on the reflections, reliefs and sometimes unusual dimensions of crystal rocks. He describes himself as a man of a thousand ideas and a thousand hands, and it was in the world of minerals that they met up with Pierre Hermé for a splendid collaboration.

  • Chocolate Entremets :

Buckwheat shortbread dough, soft cookie, smooth cream and whipped cream with pure dark chocolate from Ecuador, buckwheat praline, soy-salt chocolate chips.

  • Dark chocolate piece :

Almond Praline filling, detachable crystals, Hazelnut and Pistachio Praline filling

All this for €475, designed for 12 people.

The FRAGMENTS Signature Log

The Fragment Yule log is as beautiful as it is interesting to taste. Pierre Hermé's signature log takes us on a journey, playing on contrasting textures. The taste of almonds predominates, in a variety of forms, with a cookie of roasted almond slivers and almond paste scented with orange blossom water. A delicious orange compote adds a light acidity that blends perfectly. Expect 130€ for 12 people.

The other Logs of 2023

Pierre Hermé's other logs are available in individual (10 euros), four-person (48 euros) or eight-person (82 euros) formats. Individual logs are available for purchase from November 21 to December 31, while those for sharing are available from December 12 to 31. They feature the chef's signature flavors, which are sure to please every year.

Bûche Ispahan (top left): Resolutely unmissable, the Ispahan log is a harmonious blend of rose and lettuce, enhanced by tangy raspberry. Its soft cookie and crunchy macaron promise an unequalled taste experience.

Bûche Reflet (top): A symphony of flavors plays out here, as Pierre Hermé pays tribute to chestnuts. He combines chestnuts with ginger in two forms: in juice, and candied in small splinters in the cookie. A dance of textures and tastes to be savored without moderation.

Buche Aurore (top right): A chocolate log that should please even the most demanding gourmets. Pierre Hermé sublimates pure Ecuadorian dark chocolate, Hacienda Eleonor, with pecan. The crunchiness of the shortbread dough combines with the softness of the cookie and the chocolate-pecan chantilly.

Buche Infiniment Citron (bottom right): This log is an ode to lemon in all its facets. Between acidity, freshness and bitterness, each bite is a new discovery, and lemon reveals all its splendor.

Buche Aurora (bottom): available exclusively at Galeries Lafayette le Gourmet, the Bûche Aurora combines two flavors: rose and bergamot. A unique blend of flowers and citrus fruit, delicately balanced.

Buche Glacée Solento (bottom left): This buche glacée is designed like a cake. Mango-lime variegated ice cream is served with a soufflé cookie, making it light and delicate.

Buche Arya (middle): Here, pistachio takes center stage. Shortbread dough and soft, infinitely pistachio cookie, meltingly crunchy pistachio praline and pistachio cream sublimated by the taste of orange blossom.

Les Entremets Nomades

Now a staple in the Pierre Hermé catalog, entremets nomades are logs for 6 people at 60 euros. What makes them special is that they can be shipped all over France, all year round. Frozen, you can buy them now and keep them until D-day. 4 different flavors are available for these special logs, which this year come in lemon, chocolate, vanilla and Ispahan, of course.
