Nina Métayer, recently crowned World's Best Pastry Chef, delights us with her online Délicatisserie, her pastry counter at Printemps du Goût and her pastry counter at Les Halles d'Issy.
For this Christmas 2023, the pastry chef has redoubled her efforts to offer gourmets 5 logs in a variety of flavors, each with the promise of delighting and surprising our taste buds. For her signature creation 2023, Nina Métayer went back to her childhood memories to imagine a gourmet creation as beautiful as it is tasty.
Called " Le Flocon", this limited-edition, succulent Yule log is a meticulously crafted feast of vanilla and pecan flavors.
Comprising a millet seed and pecan crunch, a delicious soft pecan cookie, an unctuous homemade pecan-hazelnut praline, an incredible vanilla cream with spicy, sweet and round notes, and a light vanilla mousse, the " Le Flocon " log is topped with an edible decoration of crunchy cigarette tiles and candy beads.
Expect to pay 90€ for this " Le Flocon " log, to be shared between 6 and 8 people.
For Christmas 2023, Nina Métayer is also offering a gluten-free signature log. Named " La rencontre ", this beautiful gourmet creation truly seduced our taste buds thanks to the crunchiness of its crumble, the unctuous roundness of almond and honey, the lightness of the mousse and the liveliness of citrus fruit.
This incredible creation features a gluten-free crumble with rice flour, almonds and sunflower seeds, followed by a soft almond cookie, a compote of pears cooked with citrus fruit, honey and a light infusion of tea scented with apricot and thyme, and a light, creamy chestnut honey mousse with a hint of white chocolate. The whole is topped with white and dark chocolate bees.
The " La Rencontre " log costs €75, to be shared between 8 people.
Nina Métayer has also imagined three classic and traditional logs, starting with the " Bûche Chocolat " , for which the pastry chef has chosen to work with Honduran chocolate, both intense and fresh.
With its praline crunch, pain de Gênes cookie, hazelnuts, chocolate cream and chocolate mousse, as well as its dark cocoa icing, cocoa ganache and dark chocolate decorations, this chocolate log from Nina Métayer is a sure bet!
For lovers of Italian flavors, you'll love the Tiramisu log , a take on the classic Italian dessert. It features an airy sponge cake soaked in homemade coffee syrup and a hint of orgeat syrup, a thin, crisp sheet of dark chocolate, a coffee cream, a mascarpone mousse, a coffee ganache and a decor of dark chocolate and coffee beans.
Finally, if you prefer fruit, then opt for the " Bûche Exotique ", combining freshness and gourmandise. This traditional log features a crunchy grated coconut crumble, a soft almond and coconut cookie, an exotic mango and passion fruit compote baked with vanilla and tonka bean, not to mention diced fresh mango, a coconut mousse, a lime ganache and a white chocolate decor.
These classic logs cost €8.50 for an individual log, €38 for a 4-person log and €64 for an 8-person log.
