For several months now, residents of the Clignancourt and Montmartre neighborhoods have been smiling when it's time for an aperitif. From 6.30pm, lovers of good bowling and tasty bistro fare gather in their new HQ. The name? Euphorie. A convivial and singular wine bar with a festive atmosphere, Euphorie is one of those ultra-welcoming places we've had the pleasure of discovering.
At the helm are Alexis and Gautier. After several years in finance, these two friends in their thirties, passionate about wine and French cuisine, decided to embark on the crazy adventure of entrepreneurship and catering by opening their first address in the capital. After intensive training at the École des Vins et Spiritueux, the pair decided to open their establishment on rue Ramey, a stone's throw from the town hall of the 18th arrondissement, in place of a former vegetarian restaurant, L'Abattoir végétal.
With its friendly setting, beautiful blue-tinted counter and bright, modern dining room, Euphorie catches our eye as soon as we step through the door. And we're not the only ones to try it out, as the wine bar will quickly fill to capacity this Tuesday evening.
It has to be said that the establishment has a lot to offer. What's on the menu? Around sixty carefully selected French wines. The range includes white, red, rosé, organic, biodynamic, natural and conventional wines. For our part, we're opting for an AOC Pic Saint-Loup du Languedoc (Clos des Augustins - 2020), and an excellent, more tannic AOC Saint-Chinian du Languedoc (La Madura - 2019).
To accompany these beverages, Euphorie offers a wide selection ofplates to share. Cheese and charcuterie plates, of course, but also large vegetarian, vegan or fish plates. On this particular evening, we opt for the latter, a generous plate featuring salmon tartare, fruit and vegetable carpaccio, and wild garlic tomme.
The wine bar also focuses on bistro cuisine, with delicious proposals, again to share, made exclusively from local, seasonal produce. What's on the menu? Stuffed artichokes, roast camembert, cocotte eggs and beef meatballs.
Finally, we immediately fall for the unmissable octopus, perfectly cooked and ultra gourmet. And from the very first bite, we melt for the tasty cabbage leaf rolls with truffled ham, Comté cheese and pan-fried mushrooms. All sprinkled with dill. A real delight!
To end on a sweet note, we recommend you indulge in our generous French toast brioche topped with salted butter caramel and slivered almonds.
The best part? Euphorie 's wine list specifies which wine(s) to pair with your chosen dish. Alexis and Gautier are also on hand to offer invaluable tasting and pairing advice.
In the end, you leave Euphorie with a smile on your face and the feeling that you've spent a pleasant moment in a neighborhood bar the likes of which we'd like to see more often in Paris.
