Rainbow Kitchen, the vegetarian and vegan dark kitchen

We've already heard of dark kitchens and Mouflet's light kitchen, and now we've got Rainbow Kitchen, the new Parisian dark kitchen! At the head of this new project are Ilona and Matthew Minas, a couple for ten years, and entrepreneurs at heart, with a background in BuddhaBar.

Their idea with Rainbow Kitchen? To offer an alternative to dark kitchens, with fresh, healthy cuisine that honors good produce while respecting the planet. The two creators of Rainbow Kitchen were inspired to favor seasonal, sustainably grown and mostly vegetarian produce.

In all, Rainbow Kitchen unveils 6 culinary concepts, available for delivery via UberEats and Deliveroo, but also for takeaway at 29 rue de Saussure, in the 17th arrondissement. Let's take a look at the concepts?

• Picky Springs reinvents the sweet and savory spring roll with seasonal recipes. Made with natural, mostly organic, low-glycemic index products, spring rolls are just as healthy as bowls, soups and tartines.

• Roll Factory offers healthy, colorful Vietnamese rolls inspired by the world of manga. Roll Factory rolls echo Asian cuisine, with traditional recipes featuring chicken, duck, sweet potato and tofu in two varieties, and served with homemade Thai, hoisin and peanut sauces.

• Yasai, vegetarian sushi, cooked without fish or meat. The menu is suitable for both vegetarians and vegans, since recipes are made without eggs or cheese.

• Verdura Pizza, the vegetarian version of pizza, ideal for vegetarians and vegans. The doughs are made with beet or parsley juice, while a gluten-free version is also available, created from cauliflower and broccoli.

• Brunch All Day, for a hotel-style brunch right at home, with a complete sweet and savory formula.

• Rainbow Juice, 100% natural, fresh and seasonal rainbow-colored drinks.
