In parallel with its 'ZOMBIS, la mort n'est pas une fin' exhibition, which looks back at religious beliefs, voodoo rites, the origins of the strange yet fascinating figure of the zombie and its Haitian roots, the Musée du Quai Branly has invited chef Jean-Rony Leriche into the kitchens of its Café Jacques, where, in collaboration with chef Florian Dannel, he has devised a culinary voyage to Caribbean lands that echoes the exhibition.
Caribbean-born chef Jean-Rony Leriche has made a name for himself on the French culinary scene by combining the best of traditional Caribbean cuisine with modern techniques. At the helm of the Parisian Leriche Restaurant, which showcases refined cuisine prepared with local ingredients, the chef draws inspiration from ancestral cooking methods such as boucanage.
For this Caribbean menu, the two chefs have taken it to heart to offer curious diners recipes that will immerse them in the culture and cuisine of the Caribbean, and Haiti in particular. From October 8, 2024 to February 16, 2025, the menu will include Joumou soup, salad of weighed bananas, pikliz and griot, and sweet potato fondant with passion caramel.
