Les Résistants, a restaurant that plays the short circuit card

Les Résistants is the new address for committed gourmets in Paris. With its raw, tropical decor, this 10th arrondissement restaurant, which opened last January, offers a menu based exclusively on products sourced directly from organic and sustainable producers in our regions.

As the producer-direct-to-consumer market gains more and more followers in France, the restaurant sector is slowly beginning to take an interest in short circuits too. Among these advocates of a relationship without intermediaries with suppliers is the new Parisian table Les Résistants, which has been established since mid-January 2017 at 16-18 rue du Château d'Eau in the 10th arrondissement.

The philosophy of the founders of this hot spot in the République district is simple: source all the products they offer on the menu themselves. It took them months to find the breeders, market gardeners, cheesemakers, bakers... they wanted to work with. In all, Florent Piard, the manager supported by four of his friends, Clément Desbans, the dining room manager, and Yannick Laurent, the chef who has worked at Loiseau Rive Gauche and Les Orchidées, selected around a hundred suppliers, choosing them as much for the quality of their products as for their sustainable and responsible approach.

And this gamble on the short circuit seems to be paying off. Here, even on a rainy Tuesday, the restaurant's two dining rooms are virtually full. The menu is small, but changes daily to ensure optimum freshness. On this particular evening, the plates feature pollack with parsnips and beet, and celery risotto (without rice) with Salers cheese and thin slices of ventrèche.

The verdict of the palate: the products are of the highest quality, and the flavors of each one are respected and highlighted in the recipes. A way of sublimating the work of these passionate producers who defend a different way of consuming.

The prices of the dishes are really affordable and, if the portions can leave the greediest slightly hungry, the desserts make for a worthy end to the meal with, for example, a tarte tatin escorted by streusel and small squares of fresh apples.
