L'Atelier du Tartare is the story of two husbands who wanted to share their taste for good products by proposing them in a raw way, in carpaccio and tartar.
For the beginning of the new school year, a new chef arrives and proposes a new menu, full of creativity and flavors.
Indeed, it is the renowned chef Julien Valéro, who made his debut at Guy Savoy, with Yannick Alleno at Stay, at the Georges V and then culminated at the Ritz, who imagines new ways of cooking meat and fish.
Like the owners of the place, he honors products such as salmon, tuna, and beef from Olivier Metzger's butcher shop in the Nivernais.
Thus you will find on the menu a Vitello Tonato carpaccio composed of thin slices of veal, tuna sauce, capers, anchovies and parmesan (20€), the "Atelier" carpaccio with its false filet from Metzger, its salad with truffle oil and parmesan (25€).
If you prefer tartar, let yourself be tempted by the original Nordic Salmonwith its knife-cut salmon, sweet mustard vinaigrette, pineapple and horseradish whipped cream (21€) or the more classic beef tartar with its espuma seasoning.
A menu is offered from Monday to Friday with starter and main course or main course and dessert at 17€. For the greediest, starter, main course and dessert at 23€.
It offers a carpaccio or a tartar of the day with home fries, green salad or coleslaw.
On the menu also ceviche, club sandwich or caesar salad.
