Located in the heart of Fontainebleau in the Seine-et-Marne region , a stone's throw from the château, Adma is a bistronomic restaurant that combines Mediterranean flavors in a warm, friendly atmosphere. Opened in February 2024, it is run by local residents Quentin Hubert and Enguerrand Lecocq, both of whom have worked in other restaurants in the royal city.
The deliberately small menu focuses on fresh produce, delivered daily without the need for a freezer. Most of the produce is sourced from Rungis, with a particular focus on local producers, such as free-range eggs and French potatoes. In the kitchen, dishes combine classic French gastronomy with influences from the South, from Marseille to Rome via Ajaccio. These include such staples as leek vinaigrette and egg mayonnaise, as well as Mediterranean specialties such as panisses and the surprising vitello tonnato, just-snacked veal with tuna mayonnaise.
During our visit, we enjoyed the delicately seasoned pan con tomate, followed by the generous vitello tonnato, then a tajine of the day with lamb confit and subtle perfumes, as well as the peach in a ballotin, are great discoveries. We love the beautifully presented plates and the abandonment of vegetables, herbs and spices that add to the richness of the flavors. With starters priced from 6 to 13 euros, and main courses from 14 to 23 euros, this is a good address. The fact that the restaurant is already full at 7pm is an indication of this.
The Adma restaurant features two dining rooms on two floors. Downstairs, a classic room with a view of the open kitchen, for lovers of authenticity. Upstairs, a more convivial room, ideal for group meals and families wishing to be a little apart.
Note that Adma is open from Thursday to Monday, filling a gap for food lovers who struggle to find a table on Mondays in Fontainebleau. Reservations are highly recommended to take advantage of this address, which is already winning over the locals. With a rating of 5/5 on TripAdvisor, the restaurant is always busy.
