You may already be familiar with Fulgurances, the 11th arrondissement restaurant that hosts young chefs in residence. This concept is clearly appealing, since Les Résidents, opened at the start of 2018 in the 17th arrondissement, operates on the same principle of flying chefs.
Every six months or so, a new chef takes over in the kitchens, to the delight of diners in search of new culinary experiences. So, if today (and until June) the resident chef is Basque Mathieu Moity, the next chef may be Japanese, Danish or Argentinean - who knows? Indeed, Les Résidents would like to turn to the rising stars of foreign gastronomy, for more surprises on the plates!
For our part, we were able to discover the talents of Mathieu Moity, and we were delighted! Using simple, seasonal produce, this young chef, who has worked with a number of Michelin-starred chefs, handles sauces and spices to perfection, producing surprisingly tasty results.
From licorice sauce to chocolate pepper ganache and smoked beer mustard pickles, you'll be delighted with every bite! Special mention goes to the "savory dessert" with tarragon ice cream, granny apple and an airy Sainte-Maure goat's cheese mousse. As for the wine, Les Résidents opts for natural wines, which is something we like.
A wonderful discovery, with adorable service: a must-try!
