Pierre Gagnaire continues to weave his web in Paris. After his eponymous restaurant and Gaya, come and discover his third baby: Piero TT.
You're probably familiar with the name... And for good reason, the multi-starred chef already has an establishment of the same name in France.
Based at the Hôtel Les Airelles in Courchevel, Piero TT delights Savoyards and tourists alike with a colorful, fragrant and cheerful menu in the colors of Italy. In addition to the must-try antipasti, pasta and risotto, Piero TT's plates feature the entire culinary heritage of Italy.
Since mid-January 2019, Pierre Gagnaire has opened a Parisian version of Piero TT.
In terms of location, Piero TT has set up shop in the 7th arrondissement of Paris, more precisely at N°44 rue du Bac, where Gaya was previously located. The two-storey restaurant features dark wood panelling and almond-green walls, creating a friendly ambience somewhere between a trattoria and a bistro.
Proposing a"more relaxed gastronomy, both demanding and accessible, simple and comforting", Piero TT relies on quality products that smell of Italy. Everything is cooked by talented Chef Ivan Ferrara, with a short, easy-to-understand menu devised by Pierre Gagnaire around dishes embodying the great transalpine classics.
On the menu? Antipasti featuring Italian charcuterie and cheese, octopus cooked with Ligurian pesto and celery sticks, or beef tenderloin carpaccio with Melanosporum black truffle, parmesan and rutabaga.
For main courses, there's a choice of seven pasta and risotto dishes: fresh guitar-style spaghetti with seafood or flavored with Melanosporum black truffle, Bucatini with pecorino romano and pepper, or Cappelletti cooked in a truffled poultry broth. There are also two fish dishes, including sea bass with creamed endive and Cremona mustard, and two meat dishes, including the unmissable Vitello Milanese with artichokes and watercress.
Ricotta and arugula ravioli, sweet sage butter
For our part, we let ourselves be tempted by the pasta dishes, whose tantalizing aroma is already titillating our taste buds. On one side, delicious and generous ravioli with a tasty ricotta and arugula filling, topped with a mild sage butter.
Opposite, the incredible gnocchi are breathtakingly melting, delicately placed on a spinach cream and accompanied by crunchy pieces of Parma ham. We all fell in love with this beautiful and delicious dish!

After such a tasting experience, you can't help but be tempted by one of the eight desserts on the à la carte menu. To satisfy the palates of those with a sweet tooth, Pierre Gagnaire has called on Julie Bellier, who offers Piero TT rum baba, torta capri and Piero TT chocolate...
The Italian restaurant's creamy and generous homemade tiramisu is a real favorite. A pure moment of gustatory pleasure.
Special mention also goes to the original Campari Burrata with chestnut cream, where bitterness and deliciousness come together perfectly!

And to accompany these delicious dishes, you can rely on Michele Lella, our sommelier, to suggest the very best vintages from the"Botte".
In short, as you've no doubt gathered by now, Pierre Gagnaire 's new Parisian address is an absolute must. A word of advice: don't forget to book several days in advance to sample Piero TT 's dishes in Paris.
Please note that it's been over 4 years since our last visit, so the place and experience may have changed.
