Alaboratory for experimentation, a residence for young chefs... The Rhézome restaurant, due to open its doors in mid-September, is a bit of all these things. The idea was born in the mind of philosophy professor, gallerist, communicator and entrepreneur Jean-François Pascal during the health crisis: that restaurants should no longer just be places to eat, but places to showcase an entire virtuous ecosystem, bringing together producers, chefs and consumers through a positive exchange rooted in the local terroir.
With Rhézome, the entrepreneur imagines a place to live in line with his commitments, supported by Carole Léger, dining room director who has worked for Christian Constant, Hélène Darroze and Michel Rostang, and by Franck Fontaine, catering director who has worked at the Tour d'Argent and in the Ducasse galaxy.
In a space designed by architects Mur.Mur, chefs will be in residence, showcasing participatory, responsible and sustainable cuisine, in collaboration with local associations and residents. And the first chef to embark on the adventure is none other thanAlice Arnoux, a young chef from Arcachon.
A graduate of the Institut Paul Bocuse, Alice Arnoux cut her teeth with Alexandre Couillon at Noma, as well as at Fulgurances L'Adresse and Dame Jane in Paris. For Rhézome, the chef imagines a bistronomic cuisine d'auteur, using seasonal produce from responsible agriculture.
