We discovered the capital's first BIEH, opened in June 2015 in the very heart of the Palais Brongniart, the former Paris stock exchange. This New York bistro, run by Lyonnais, has established itself as one of the burger hotspots in its native Lyon. Since 2008, the bistro has been serving top-quality products, made with passion by top chefs who are determined to restore the burger to its former glory .
For its first location in the capital, BIEH has found a prime spot, part of the Palais Brongniart. The ambience of the bistro takes us back to the chic districts of New York, where businessmen meet for a meal. With its leather banquettes, round wooden tables and high tables, BIEH abandons the Dinner codes of the first restaurants in favor of a chic, hushed atmosphere.
On the menu, BIEH offers 8 burgers inspired by the US, such as the Redwood Burger with beef, smoked brisket, cheddar and crème forestière served at 13€, and the TEX MEX burger with jalapeno pepper and guacamole at 13.50€; BIEH also offers classic American sandwiches such as the HOT DOG at 6€, the Bagel at 9€, the Club B.L.T at 8€ and the meat ball sandwich at 7.5€. These dishes are served on their own, but can be accompanied by salad, home fries or coleslaw for an extra 3€.
But BIEH doesn't only offer fast food, and takes us back to the US with traditional dishes: we can enjoy ribs for 15€, Cajun chicken for 14€ and even a piece of Angus for 22€! In summer, salads are on offer to keep us happy: the Caesar salad, the Californian Lobster Salad, or the Venice salad with coppa and mozzarella di buffala, priced from 13.50€ to 18.50€.
Of course, to round off the meal in style, you can count on pecan pies, cheesecakes and banoffees, priced from 3.5€ to 8.5€.
Every day, a dish of the day takes us to one of the US regions, to be enjoyed with dessert in a 17.50€ formula, whilea good brunch will take us on a culinary tour in a few weeks' time.
